Non Alcoholic Christmas Cake Recipe?

I have been asked to make a Christmas cake for someone who can't have any alcohol. Looking on here the most popular fruitcake recipe is Delia's (which uses brandy). Does anyone know of a good substitute for the brandy, or another fruitcake recipe that is delicious without the alcohol? I don't seem to be able to reply to comments on here for some reason, so thanks in advance :)

Hello Safandi,

While the cake itself has no alcohol in it, I soak my fruitcakes in a mixture of brandy and grape juice.  You could simply use juice in place of the alcohol and the cake would still be moist and yummy.  I like the richness of grape juice, but you could also use apple or cranberry,

Like Sandra said...juice. Maybe add some simple syrup and/ or butter. But be careful storing it as the alcohol preserves it.

Yes, I forgot to say, since you are not using alcohol, which is a preservative, you should keep it tightly sealed and stored in the refrigerator.  I always keep mine in the fridge anyway, out of habit.
