I'm making a two tier chocolate cake for someone, but they don't want the cake to be overly heavy. I usually just use buttercream or ganache. Anyone have an alternative filling recipe that's stable enough for a tiered cake? thanks :)

Any fruit jam will work. - Apricot, pineapple; strawberry - any flavor you can find in any store.  Had many, many requests for choco w/raspberry jam fill over the yrs.  You could also use Bavarian Crème.  Henry & Henry's sleeved fillings are great and easy to use in a pinch.  I always kept them on hand.
