Hi I'm looking for a recipe for a pumpkin roll.  

I made one last week it turned out OK. It didn't fall apart or anything, but after sit in the refrigerator for a day or two it was kind of tough. So I'm not sure if it was a bad recipe, or if I did something wrong.  I don't think I over baked it at all. I followed directions and took it out as soon as it was done.

It looks delicious and your roll is perfect!  I've only made one, but I am guessing it is because there is no oil or shortening in the recipe, at least there was none in mine.  Like yours, after a few days, it became dry and not as nice as when it was first baked.

Thank You!  This recipe had 3 tablespoons of sweet cream butter.

@sandra smiley... I'm sorry I told you wrong.  The butter was in filling not the bread. So that may be why it was a little tough.

I have discovered that if you get impatient, when the site is working slowly - which it always is - and hit the Submit bar more than one time, it will post the reply as many times as you hit the bar.  If you catch it right away, you can delete the duplicates by clicking on the aqua Actions button at the upper right side of the comment.

I don't have enough experience with rolled cakes to know for sure, but I believe they use the fatless recipe to make them flexible enough to roll without breaking.
