Anyone Use Unusual Ingredients In Baking?

Watch an older segment of a cake show this a.m. and some of the ingredients they used were Jasmine, Rosemary, Starfruit and Sweet Olive. Have you ever used any of those? What have you used? I know about olive oil cakes and I made another green tomato cake today but what have you come up with?
i make a lavender cookies and i just bought some tigernut flour -- haven't used it yet -- tiger nut is a tuber --
I think the most unusual ingredient I've used is prunes, and they are not odd at all. Never heard of tiger nut???

Lynne, prune cake was one of my mama's specialties. She baked it as a bar cake, like a brownie, but it was very moist and oh so delicious! It had a glaze made with buttermilk.
