I need to make cala lilies on a wedding cake. I'd like to make them out of either fondant or buttercream....Any ideas, this is for the end of Feb. 2007. In advance, thanks for your help

They should work well with fondant, even without adding Tylose because the petals are not ruffled. If you don't have a Calla Lily cutter you can use a heart shaped cookie cutter. Use a piece of floral wire #30 guage or if you don't have that you could use a bamboo skewer for making the centers. The wire gives you more flexibilty in the arrangement but if all you want are just a few laying on top of the cake or the top edge of a lower cake the skewers would work. Make a small ball of yellow fondant about the size of a pencil eraser, roll it between your middle finger and thumb to elongate it into a small rounded oval, dip the pointed end of the skewer into gum glue or egg white that is slightly beaten. Slide the fondant center onto the skewer, about 1/3 of the way up. Pinch at the place where the center meets the skewer, this will be the bottom of the Calla center. Stick the skewer into a piece of styrofoam or just set them in a glass to dry. Roll white fondant thinner than you would to cover a cake, cut out the heart shape, if you have a ball tool and foam cel mat you would thin the outside edge of the petal, if not then just leave it as is. Use a dull side of a butter knife and make an indented line down the center of the petal from top to bottom. The two curved sides of the heart shape will be the top of the petal. Brush a little gum glue or egg white down the indented line. Lay a dried yellow center on that glued line, now with the point of the heart facing you go to the top right hand side of the heart and fold it over the center to hide the skewer and pinch lightly to attach it to the skewer. Begin to roll the flower as well as the skewer to your left, not too tightly, you want the flower to be slightly open when you get to the other side. When you get to the other side stop rolling and open up the the left petal edge and roll it back a bit to make the flower look slightly open and natural. pinch the fondant at the top of the flower to attach it well to the skewer. Pick the flower up by the skewer and fold the point of the heart under towards the back of the flower to give it some curve. Stick the skewer back in styrofoam and let the flower dry. If you are using floral wire you will want to tape the wires with green floral tape when they are dry and then tape the flowers together in a cluster. If using the skewers and if the stems of the flowers will show, tape them with green floral tape as well. cut the stems to the length you want with a sharp pair of scissors. If they won't show you can leave them untaped and cut them off close enough to the flower that you can't see them when you lay them down. I hope this makes sense to you and doesn't confuse you. It is so much easier to show someone than to describe how it's done in writing.
