Hello everyone I have to do a large petal cake For a wedding. I normally deliver my cakes cold can I put this type of cake in the fridge 
maybe -- depends on what you use to make the petals -- the water content -- the humidity that day -- test it with a few petals and see how it does --
My first thought was that the flower was made with gum paste, which I would not refrigerate. I suggest making modeling chocolate using Wilton (or other brand) Bright White Candy Melts and making the flower from chocolate. It works beautifully for flowers and humidity is not a concern. Modeling chocolate doesn't like heat, but unless it will be outside on a hot day, no worries.
