I ‘m doing a wedding Nov 3rd. I want to bake ,decorate as many things I can beforehand. I’m making rice Kris pay pops dipped in white chocolate w/sprinkles. They will be put into plastic bags . How long in advance can I make these? If I make them in Oct will they still be ok at wedding time? I can wrap them very tightly with not only the bags but also wrapped with foil and then stored in a air tight container. Any thoughts on doing this?

they have a good shelf life -- a couple weeks is fine specially sealed in choco

I agree.  The chocolate coating will seal in the freshness, so they should be just fine.
