I have a client who wants to postpone an Alive in wonderland themed cake by a week. It involves a  large amount of very detailed gumpaste sculpted items, isomalt bottles, and items with edible images on them.

I know I can freeze the fondant covered cake without an issue, what about these hardened sugar work and edible image items? Can they be frozen if attached to the cake?

I, personally, would wait to attach those items until it is time to deliver/have the cake picked up.  They should be fine if you store them in a cool, dry place for the time being.

no, the sugar items won't freeze/thaw well -- they might last at room temp -- might not -- and remember to tell people that they can get into some unhappy gastric distress if they eat too much and it's not hard to eat too much on the isomalt stuff -- especially for kids or anyone
