Custom Fondant Designs On Side Of Cakes

What is the best way to cut out a custom fondant design and then transferring it onto the side of a buttercream iced cake?  I have all sorts of issues.


Any advice is appreciated.

You might try cutting your pattern in reverse of the desired end result, transfer it to a piece of waxed or parchment paper, apply whatever you are using as an adhesive to the back (the exposed side) of the fondant, then position it on the cake and remove the parchment paper.  I have used this method to apply intricate, fragile pieces.

When I am cutting out the outline of a figure, I print it normally, and then cover both sides of the template with heavy, clear packing tape.  Cut out your figure from the paper with an exacto knife or fine scissors, and then put a very light coating of shortening on the back.  I place it right side up on the fondant.  The shortening helps keep the template from moving.  Then I cut it out with an exacto knife.  I ususally use a brush to put cornstarch on the knife, which helps give sharper cuts through the fondant. To put the figure on the cake, if the icing hasn't crusted, just put it where you want it.  If it has, you can use small amounts of buttercream, water, or edible glue to adhere it to the cake.  All will work.  If the figure is heavy and wants to slide, just put some toothpicks under it until it adheres.  Good luck!
