I'm making a cake for a wedding shower and using modeling chocolate for the first time.  I'm familiar with freezing cakes because I definitely like to make ahead of time.  With this cake though, we have to travel in a car about 10 hours and then the shower isn't for another couple days.  I'm thinking maybe a little dry ice to try to keep the cake frozen.  Any ideas?  Any thoughts on thawing a cake with molding chocolate?

Dry Ice should be fine if you’re wanting to keep it frozen for the ride.

I always recommend going from freexervto fridge for at least overnight, keeping it in the fridge, and then letting it come to room temp from the fridge a couple hours before it’s needed.  If it sweats, don’t touch it.  Just let it evaporate off.  That’s what I do, anyways.
