Drip Cake, Fresh Strawberry Filling And Sugar Flowers

Hi

I have been asked to make a buttercream semi naked cake, filled with a fresh strawberry filling. Finished  with a pink drip and sugar roses/flowers as a topper. 

Obviously because of the strawberry filling I will have to keep the cake refrigerated. My question is ... will that impact on the ganache top/drip? 

I’m happy to arrange the sugar flowers at the venue so they don’t go in the fridge. I’m just worried that the ganache will get condensation on it if it’s regridgerated and then bought out to room temperature. 

Any advice is greatly appreciated.

Hi! Your ganache and cake may sweat a bit if it’s hot or humid, but just leave it alone and it will evaporate off eventually and be fine

Ganache will be fine as mentioned above.  It will be great!

I have a cake in the frig right now that has a ganache drip.  It is our personal cake and it has been refrigerated for about a week and the drip has not changed at all.
