I am working on a Harry Potter unicorn cake and the rosettes are falling off the back of the cake! It’s practically finished and I don’t know how to keep it from happening.

are  you piping on cold cake/buttercream?  That can cause that.

No, it wasn’t cold. I just pulled the whole back of the cake off, though, before it collapsed.

I have never made a rosette cake but I'm wondering if maybe your icing is too thick.  Maybe try adding a bit more fat to it.  YOu really don't want to thin w/liquid - you want to make it creamer.

Should be ok with a standard American buttercream and a freezer to harden things up as you go.  Any luck with round 2?

I ended up removing all the icing down to a crumb coat on the back of the cake and piping new rosettes strait onto it. It worked beautifully. I’ll remem not to fully ice the cake next time!
