Hey everyone,

Pleased to meet you all, this is my first post!

I'm new to doctoring box mixes and am using a box mix of brownies for a friends wedding. I managed to get a 3.5kg mix from a wholesale place (Chef's Larder - brand) and I've been practising with a couple of batches. So far they are obnoxiously sweet! 

I've not altered the recipe much, I used coffee instead of water, added some vanilla, a tablespoon of cocoa powder, some melted butter and chocolate chips. 

Could anyone give me any tips or ideas as to how I could alter the sweetness? I think this first batch is going to be too oily so I'm swapping out the butter for a little milk next time, but would yogart be a better shout for reducing sweetness?

I would add a big pinch of salt and more coffee.

I sometimes make ganache with a non-dairy cream which is far too sweet for me. Salt and coffee makes it much better and really balanced out the sweetness.

add some more unsweetened cocoa --

If you are melting the chocolate chips to add them... Try unsweetened bakers chocolate instead for that... it will also reduce the sweetness...
