I don’t like the taste of fondant so would prefer not to use as toppers. Any idea what edible thing to use to make cute 3D or 2d toppers?

I use candy clay for cut-outs or melted candy melts in a mold.

Modeling chocolate, which I believe is the same thing as cand clay.  It tastes yummy.

You can do lots of 'figure piping' with b'cxream.    And then there is also the fact that fondant can be flavored to suit your self.   Just add a small amount and knead it in - keep doing that until you can smell &/or teste it.
