I'm making a wedding cake for a wedding in November, I'd like to start making the flowers now as they're so time consuming. What would be the best to use? Gum paste flowers or white  modeling chocolate. ? I think they can be made far in advance as long as they're stored propertly. Any suggestions on what I should use to make the flowers? Thanks Carole

yes as K8 said, gp is your best choice for this.  And yes, you can make them far in advance.

Ditto, gum paste.  Keep it in a cool, dry area, preferably low light, and they will keep indefinitely.
