I’m making a double barrel cake with a geometric pattern like this. Would it be best to wrap the cake in fondant and then apply fondant tiles or apply the fondant tiles directly to the ganached cake? If the second option, then would edible glue (from tylose) stick to ganache?
I would use the Jessica Harris wax paper transfer method to apply the fondant shapes to the smooth Ganache.
Yes tylose glue would work just fine, be sure to only use enough to make the back of your fondant tacky, not wet. If you make it wet it will slip, tacky and it should hold perfectly.
My goodness --- making that design would make me crazy and blind and dizzy. I did this for a quilt one time and all three occurred before I finished it.
