I just made my first mirror glaze cake. The flavors were amazing, the layers looked great and the glaze was super shiny. However, after taking it out of the freezer and glazing it, I put it in the fridge before we left for thanksgiving. After an hour drive, the mousse settled and completely ran off the cake, what a mess!  What am I doing wrong?
