I am making a cupcake cake for my son's Confirmation this Sunday. I was planning to bake the cupcakes on Saturday and ice Sunday morning. I worry that I'll be running around so much Sunday morning that I will be rushed. Can I decorate them on Saturday also? I am using the Wilton buttercream recipe but with shortening not butter. My son has a milk allergy.
Also, how should I store the cupcakes overnight if not icing til Sunday? Do I just put them in a box and lightly cover with foil or saran wrap?
Any advice would be great!

I freeze my iced cuppies all the time... bake them friday night... ice them then... freeze them till sunday morning...
It is just one option... and only if you have the space...
