So how far in advance to you bake for an order? I use NFSC and Antonia's Royal Icing. I generally start a week out...
7 days before: Make the dough
6 days before: Bake cookies
5-3 days before: Begin icing
2 days before: Finish up details on icing
1 day before: Pack the cookies
