My go to caramel icing that I have doubled a million times died tonight when I tried to make 5x the normal batch.   I still have no idea why but for right now the consistency is good but the caramel flavor has been replaced with the taste of pure sugar.   Has anyone ever used caramel flavoring?   I was thinking about buying some tomorrow and adding it.   Any other ideas on how I can get the caramel flavor back in it?   It was for my babies 2nd birthday party tomorrow and I'm exhausted so there's no starting over.  Tia

Try adding a pinch, or more, of salt. You can add Watkins caramel extract (available at most larger grocery stores). Hard to say if I can't see the original recipe....

Roberts butterscotch flavouring is fantastic - love that stuff! It is as important to me as vanilla extract haha, I think you could use that for sure to enhance your caramel.
