Hi! Can Pastry Pride be used as a filling under fondant? The outside of the cakes will be ganache covered in the fondant. And do I need a dam with Pastry Pride? I'd like a nice thick layer since there won't be any  buttercream on the cake. Thank you!

Yes, it can be used as a filling - plain or mixed with jams, fruit or many other yummy things.  The fact that the cake will be covered w/fondant has no effect on it what-so-ever.  Though a dam is not really needed it probably would be a good idea.

Thank you for your reply. Would you use a ganache or American BC to make the dam? I'm covering the outside with ganache before covering in fondant and it would be great to not have to make yet another Icing just for the dam. Any suggestions what to use?

Don't see why you couldn't use the ganache as a dam. I would perhaps whip it to lighten it up a bit though.

Actually I have never used ganache :)  But I had the same thought as MikNHoney84.
