Can anyone tell me why my white choc mud cake has opaque spots like in the pic shown? It is the same for my caramel mud cake too (which  also uses white choc). It is not raw or  runny but the texture is wrong and it doesn't look good!

wild guess -- the batter on the bottom of the bowl wasn't mixed exactly as well as the rest of the batter and when you scraped out the bowl the less beaten areas baked on top & it was a little noticeable --

think?

Hi K8memphis, thanks for your suggestion! So you think it was underbeaten? I was wondering if it was overbeaten. I really have no idea!! I will try to beat more next time and see how it turns out.

no, i don't know if your batter is over or under beater overall -- my suggestion is to scrape the bowl exceeding well and make sure all of the batter is as incorporated as the rest of it  -- so everything is mixed the same --
