Cakes That Taste Better After A Few Days

I am in charge of dessert for a 60th birthday party but have to travel 8 hours.

We are leaving Thursday night and the party is Saturday night.

After going over a few different scenarios I think the easiest would be to decorate the cakes (3 different ones) on Thursday, pack them up in a cooler with ice packs and go on our way.We will be in a hotel Thursday night with a fridge so all cakes can be refrigerated and the ice packs re frozen. Friday again, we can have the cakes refrigerated once at our destination. Saturday will be party day.

With that said, I have a carrot cake and pink champagne cake that always taste better after sitting for a few days so I thought those would be perfect to do - I'd like a chocolate cake too...

Do you have a favorite chocolate cake recipe that tastes better after sitting for a couple days? Any other cake flavors?

Chocolate mud cakes ALWAYS taste better after a couple of days.
