can I add coffee creamer to cake batter to flavor it

I see no reason why not.  I use it to flavor my buttercream frequently with good results.

Yes, one of my favorite recipes on here White Velvet uses White Mocha Creamer.

while i don't think i've ever done that -- i do think that if i did i would substitute some of the liquid for it yes? not just add it in for flavor -- kwim -- is that what you meant

Totally agree, -K8memphis, if using liquid creamer.  I use the powder form to add flavor to frosting.
