Hello I live in California and I'm trying to find an Italian meringue buttercream recipe that's approved by the cottage food law. Or any butter cream recipe approved by the cottage food law I've been looking online for answers and so far no luck. Also can I use ganache? If so what recipes? Or is there a website with recipes

Can't your local Health Department give you answers?

They don't have recipes I have to submit my own and hope they accept it but I didn't wana waist my time submitting all my recipes to have them rejected. But it looks like that's the only way to see :/

I saw a recipe for SMBC that doesn't have egg whites. Ive never tried it but thought about adding it to my list to try! Have you tried google search for IMBC with meringue powder? ive heard about people using  it instead of regular egg whites.
