Hello I live in California and I'm trying to get my home business off the ground by getting licenced and all of that stuff. I was reading about the cottage food law and what's allowed and not allowed. I'm having a hard time finding what buttercreams are accepted. Is Italian meringue buttercream or ganache accepted? What types of buttercremas are accepted? If fruit pies are accepted can I make fruit tarts with fresh glazed fruit? Or do the fruits need to be cooked? Can i use fresh lemon or zest in my buttercreams? I have so many questions and no idea where to go for answers. If anyone has any advice I would appreciate it alot
