Let me preface this by saying that I have done a ton of research online before even asking here. I just wanted to throw line out here as well, to see if anyone knew of a secret tried-and-true recipe or any great substitutions like best working egg substitutions .
What I'm looking for: a white or vanilla cake recipe with a similar feel and texture to WASC cake. It needs to be Gluten free Dairy free Eggless cake. Yes, I know!!! If any of you reading this happen to have worked some miracles in the past with such an intensively allergen free cake, let me know! Please help!
The bakery I worked at, we used our standard vanilla cake recipe (sorry can't share). Subbed the same amount of gluten free flour for regular flour (we used a GF flour from our local restaurant supply store). Used soy milk instead of regular milk, 1:1 ratio. And this egg replacement http://www.ener-g.com/egg-replacer.html. So if you have a standard cake recipe, just sub out as needed. Hope that this helps some :)
