Can someone tell me what they think the cake in the above picture is dusted with?  At first I was thinking it was powdered sugar, but wouldn't powdered sugar dissolve on the fruit?  If not right away, over the course of an hour or so?  The cake will have to sit at the reception for hours before being served.  I want the effect of dusted powdered sugar, but obviously don't want it to disappear.

I recently ran into the same problem. King Arthur Flour sells a "snow white non-melting topping sugar". Some people say if you use a lot of it.... like for covering donuts, it has an odd taste. But if you just dust it on a cake, it'll be fine. It should give you the look you want.
