I'm making a few cakes for a Saturday birthday.  I want to start one of the cakes today, Monday.  This one will just be a buttercream decorated sheet cake. I normally start my cakes earlier and freeze them fully decorated.  Since this is only five days... Is it alright to just refrigerate?

The fridge tends to dry cakes out....I'd still freeze.

I never put cakes in the refrigerator.   (But I don't use perishable fillings.)  Always the freezer.

Oh definately what the others said........freeze it - doesn't need to be iced/decorated.......just toss the baked cake into plastic a bag and freeze it.
