I would like to know how to cover a cake dummy before icing and decorating.

I use buttercream and I just put it on the dummy as if it was a regular cake. I've seen on here that a lot of people wrap the dummy in saran, but I dont' know why. When I want to reuse the dummy, the crusted BC pops right off for me. The dummy needs little more than a wipe down with a damp rag and it's ready to go.

I use buttercream too and just ice it like a real cake. I put it right on the dummy cake, when Im done I just scrape it off and wash with a soapy sponge and hot water. I do them just like Id do a real cake. Sandy

I learned in a class taken way back that you can wet the whole dummy and the fondant will stick to it. That's what I do for mine if I want to reuse them.
