I need to made about 3 dz chocolate covered apple slices, like the ones that keep popping up on pinterest for Saturday. I know you can make the whole apple covered in chocolate up to a month in advance, but what about the slices?
Apples start deteriorating as soon as the meat is exposed to air and I doubt chocolate will slow that process very much. I doubt they'll keep more than 48 hours even if soaked in an acid bath (lemon juice & water mix) before dipping.
A test could be run if started today - slice one apple, dunk it in chocolate and refrigerate the slices. Test just one slice each morning and evening until they start to go bad or until a Wednesday. If they last that long we'll know that Thursday isn't a bad day for the project.
