I have a Batman cake for this Sat. & I was planning to fill the cakes tonight with chocolate mousse & whipped cream, wrap w film & refrigerate to cover Friday night. So I wanted to ask would it be ok to leave a 2 tiered cake with chocolate mousse & whipped cream fillings out @ room temperature? I'm new to covering cakes with fondant!

Thanks

no it's unsafe to leave them out of the fridge -- could make people sick -- keep it refrigerated all the time --

best to you

Ok. How would I go about minimizing condensation on the fondant?

i've tested my recipes and fridges and i know what works for me so maybe that's what you should do -- test --

when i deliver i keep my cakes climate controlled in corrugated cardboard delivery boxes which insulate cold cake really well which reduces condensation --   so they come to room temp more gradually --

i had a heater installed into a fridge to reduce the condensation in the fridge  -- but a ton of it has to do with your particular  weather esp humidity
