Hi guys!

  I'm looking for THE BEST carrot cake recipe for a wedding cake. Just plain carrot, no pineapple, nuts, raisins, etc..  I'm wanting to do something small, probably a 10 base and a 6 or 8 top. It will be covered in fondant. I've seen people talk about the whimsical bakeshop recipe but I can't seem to find it... Open to any tips and tricks too! Thanks everybody!!

The carrot cake recipe I use is the Smitten Kitchen one.

I have made many layer cakes with this recipe and always receive rave reviews.

I highly suggest my *original* WASC recipe using a carrot cake mix.  Add 1 cup of  grated carrots and if available one jar of babyfood carrots while reducing the water added to just 3/4 cup.   One recipe will give you one 10" and one 6" layer so you would make 2 batches for you wedding cake.
