Hi All,

Im making a cake for my husbands birthday.  He has requested white choc mud cake (so its not as rich as a trad choc mud cake).

In the past I have used a lemon curd between the layers to cut through all the sweetness, however my hubby does not like lemon.

We live in a very humid / hot part of the country so Im trying to avoid using cream in the cake just so it will last a bit longer.

Anyone have any ideas?  

He loves a Black Forest cake so I was wondering about using a sour cherry between the layers?

He also loves Nutella so maybe a Nutella buttercream?

There will be no fondant on the cake but I will do a white choc ganache icing.

OK no ideas so Im going to wing it... I'll let you all know how it goes and if its not a disaster I'll post a pic with the flavour combination..
