(1) What is the best method for stabilizing whipped cream to make roses without changing the flavor or color of the whipped cream (for a strawberry shortcake)? Looking for pros/cons for using gelatin vs. powdered sugar vs. marshmallows vs. vanilla pudding mix, etc.

(2) Will changing the color of the whipped cream (for decoration) make it runny?
