I have volunteered to make ice cream cupcakes for the monthly birthday celebration at a orphanage our cake club sponsors.  I have found many ways to bake the cupcakes, but I was wondering if anyone has made these and added filling to them before icing them.

Would sticking a dowel into the cupcakes work?  

Anyone have suggestions...
