So I am making a 3 tier wedding cake for a friend.
The bottom tier is a chocolate cake with strawberry jam and chocolate ganache filling. The middle and top tier will be a 'no bake' cheesecake. All of these will be covered in Marzipan only. No fondants, Royal Icing, Buttercream, etc. Even the flowers will be made in Marzipan.
I believe these cakes would have to be refrigerated because of the cheesecakes and the ganache fillings.
My question is how will refrigeration affect the Mazipan covering? Will it make it hard to eat? dry? Cracked?
Does anyone know?
I also have another question. How should I attach marzipan flowers to marzipan cake covering? Should I use a sugar glue? Just water? etc?
