Ganache On A Mud Cake

I have been asked to deliver a wedding cake on Thursday for a Saturday wedding.  The venue assures me they can keep it cool.

My question is the bottom tier is a large chocolate mud cake.  Would I be able to cover this in ganache on the Tuesday and it still be nice on the Saturday?

The other two tiers are vanilla and lemon sponges which I will ice on the Thursday having had them in the freezer until then.

Yes Lyndaa a ganached cake will be fine for over a week.  Or you can ganache your cake and put it in the freezer until you need it.

Thank you, that is very good to hear, it will be good to have that tier done earlier.  The remaining two are to be semi naked, so will make sure I am generous with the simple syrup on those.
