In decorating a dummy cake, what decorating products are best to use?  The 'cake' will be on display for at least 2 weeks.  Would gelatin pieces be a possible choice?  Or should it be basically fondant and royal icing?

If it's going to be displayed out of direct light and heat--really, that goes for any display cake-- gelatin decos should be fine.  They're very sturdy.
