Cakes For Weekend... When Do You Start Baking The Cakes?

As the title suggests, I have 4 cakes going out this weekend. all cakes are 3 tiers so I need to bake 12 cakes.....

1 for Friday, 1 for Saturday and 2 for Sunday...

My recipe is a standard madeira style firm cake with buttercream filling....

When is the best time to bake the cakes WITHOUT freezing them ( I don't have the space in my freezer just now) and for them to stay fresh and not dry out? any advise would be great thanks!
