I get a lot of orders for smash cakes for photo sessions. I always use my same buttercream recipe for the icing, but they just aren't "messy" enough for the pictures.  I have one ordered for next week, and I want to improve it. Can I get suggestions on how you do smash cakes for these shoots? DO you use a different recipe of icing that doesn't crust over as easily or that can get messy? Do you use a different recipe for your cake batter than you typically do? Mine are already pretty moist, and I even add some simple syrup to get it more moist for these shoots. The icing just doesn't work the way others do.  TIA

Depending on the design they want, could you use cream?  SUPER messy :-)
