If I have a cake that's due Saturday  can I bake it Thursday  and let it sit out covered wirh Saran Wrap until Friday. Then Friday I will decorate the cake and Saturday I will take the cake to the party.

You can but I would bake it later in the day Thursday so it only sits overnight.  I would then torte, fill and frost early on Friday because that will seal the moisture.
