I found an allergy-friendly chocolate custard recipe, with the following ingredients, and I was wondering if anyone had any idea of how long it could safely remain at room temperature: 2 14-oz. cans coconut milk, 1T gelatin, 4-6 T honey, 1/4 t sea salt, 1 T vanilla extract, 1/3 c cocoa powder. I don't sell cakes; I'm just looking for a pudding/custard/creamy chocolate filling recipe that will be o.k. at room temperature for several hours, and I know that a traditional chocolate custard shouldn't sit out that long.
That looks like a recipe that needs chilling to set - the gelatin is the only thickener. It may soften considerably at room temp - it would still be safe to eat, but I think you would be better to thicken it with some cornflour/cornstarch and cook it out first. That should be firmer at room temp.
