Help With Wedding Cake Filling

I am making my first wedding cake. The bride wants a pineapple cream cheese filling. Any tried and true recipes out there?

no i don't have a recipe -- just wanted to be sure that you know this filling will need to be kept at 41 degrees or below and handled carefully to ensure safety for all the guests -- cream cheese can become a hazardous ingredient even if it still tastes fine -- it can only be out of temperature for a few hours and remain safe

there are shelf stable recipes and products available -- you could combine two store bought sleeve fillings for example -- a pineapple and a cream cheese -- but you'll want to test it in advance to make sure it combines well without weeping --

Earlene Moore has a cream cheese buttercream recipe that does not need refrigeration.  I suggest you google her name and follow the link(s) to the recipe.  You can add pineapple to it.
