When To Cover Cake With Fondant?

If I am making a cake for a party on Saturday, is it ok to put the fondant on it today and refrigerate it? Or shall I cover it tomorrow?

i usually fondant my cakes the day before delivery but there's no right or wrong -- i'm sure busy shops have to cover two days in advance sometimes -- i just figure it's more time for problems to develop -- if you are a slow or new fondant user two days in advance might be a good idea --

and make sure there's no cut onions/garlic, stinky cheese, old salmon or kippered snacks in the fridge anywhere :)

Once a cake is covered with any icing it is good at room temp up to 3 days.  As a general rule cakes covered in fondant should not be refrigerated unless it has a filling that MUST be kept refrigerated.

I always refrigerate my cakes with fondant and so do some professional bakers (like Ron Ben Israel).  

The fondant will actually keep your cake fresh with that extra layer.
