Hi! i have been trying and testing various cake recipe's over the past few years and have yet to find a 

recipe that is good to be carved. Does anyone have any suggestions?

I prefer it to be as light as possible, but not so light that when you carve it it will start crumbling apart.

I have a book written by Debbie Brown "50 easy party Cakes".  She has a sponge cake recipe used for all of her cakes and they are all 3-D cakes.  Have not tried the recipe yet but maybe this one could work for you?

The cakes in this book are really cute.

It'll be hard to find a light cake easy to carve. Try Joy's vanilla cake from Joy of Baking. It's a good solid recipe great for carving. Try chilling the cakes really well or semi-frozen before starting to carve. It really helps.
