I am looking for a great white cake recipe that will be filled with strawberry mousse. The recipe I normally use is a dense cake and the last time I filled it with mousse it squeezed out as it was being cut. Could anyone recommend a good recipe that is light and fluffy, sort of like a sponge cake?

Hi there, the vanilla sponge cake I use is fool proof!
Weigh 4 large free range eggs in their shells. Whatever the weight is, say 260g, weigh the same in butter sugar and self raising flour.
Cream butter and sugar until pale, then beat in the eggs making sure it is well combined and no yolks are hanging round the edge of the bowl. Slowly add the self raising flour. Then add about 1 teaspoon of vanilla extract and baking powder (it will say on the back of the packet how much to add to the weight of flour). Pour mixture into 2 8inch tins and bake for 25 minutes at 180 degree C.
