Im making an akubra ( life size) for my sisters 21st. 

The party is not till the 2nd of May. I am wanting to make the brim in advance but I have a couple of questions. 

1. I want to do a trial run today. If it turns out well, Is there a way to store it so it lasts till the party. 

2. If i do that, will the colour of the brim be different to the hat? ( its a hot pink)

It will definitely keep - I would be using CMC to stiffen the fondant for the brim too. Then keep it in cardboard box not airtight so it stays hard.

in terms of the colour, if you make a big batch of the colour now and use part for the brim and then keep the rest for the cake in May they should be similar enough in colour, especially if you keep the brim away from light so it doesn't fade. Of course if you have an airbrush you could give them a light spray to match the colour.
