I'm planning to fondant my first cake over ganache this week. can i put the fondant straight over or do i need to brush a sugar syrup or water first? and if so, why? thanks!

You need something because ganache firms so that it is dry to the touch, and fondant won't stick to it other wise. I just use water, which works fine. Not so it's dripping wet, just so it's tacky.
