AWhat are these emulsions I see referenced every once in awhile? I saw red velvet the other day, and cream cheese emulsion too. Is this just a different way to describe artificial flavor?

ALorAnn. I love them. In Texas we can't sell cream cheese icing so I put cream cheese emulsion in my buttercream.

You can use cream cheese icing in TX under the CFL….see my post on this thread.  I used an emulation once and it tasted nothing like cream cheese.
